I don’t often make biscuits, but we all deserve the occasional treat and these are absolutely delicious. Dates are high in natural sugars though and can spike blood sugar levels, so don’t eat many of these at once. Remember, they are a treat!
Ingredients (makes 18 small cookies)
180g dates (chopped finely)
50g coconut sugar (or other brown sugar)
80g unsalted butter/coconut oil
2/3 tsp bicarbonate of soda
45g wholemeal flour
45g ground almonds
75g buckwheat flakes
1 tsp cinnamon
1 tsp vanilla essence
1 egg (beaten)
Instructions
Pre heat oven to 180C/160 Fan/Gas 4
Melt the butter in a small saucepan then add the chopped dates and sugar and cook over a medium heat for 5 minutes until the dates soften.
Take the date mixture off the heat and stir through the bicarbonate of soda, then leave the mixture to cool slightly.
Combine the dry ingredients, then add the beaten egg and vanilla essence and stir till thoroughly mixed.
Shape into small balls, flatten slightly then place on trays lined with baking parchment. Bake for approximately 10 minutes then cool slightly on a rack before eating.
