Pecans are a great source of calcium, magnesium and potassium as well as being rich in antioxidants. As with all nuts they are packed full of protein, healthy fats and fibre to keep you feeling full. The cinnamon in these helps to sweeten them and has also been shown to balance blood sugar levels.
Ingredients
125g pecans (plus a few extra cut into large pieces for decoration)
25g dates
2 tsp ground cinnamon
1 tsp maple syrup
75g almond butter
1 heaped tbs coconut oil
Instructions
Chop the pecans in a food processor for a minute or so until they are finely chopped but still retain some texture. Add the dates and pulse for a few seconds then add all the other ingredients and blend until combined.
Roll the mixture into balls, decorate with a pecan piece and put in the fridge to set for a few hours.
These will keep in the fridge for 2 weeks or freeze well for up to 3 months.
